  Fish Paste with Vegetables

Ingredients

500 g boiled filleted fish
300 g carrot
200 g onions
50 g dill
100 g butter
ground black pepper to taste
salt to taste


Method
Peel the onions and carrots, shred them finely and saute in butter. Remove bones from the boiled filleted fish and grind it in a meat grinder together with the sauteed vegetables. Sprinkle with salt, pepper and finely chopped dill greens and whisk it all well with an electric mixer, adding 100 g butter. You may also cook the paste without any butter.

  Liver Paste with Carrot and Onions

Ingredients

300 g beef or pork liver
500 g carrot
300 g onion
200 g butter
1 teaspoon grated nutmeg
salt to taste


Method
Cut the liver finely and fry it in butter. Grate the carrot coarsely. Finely shred the onions. Stew the chopped vegetables with the liver in a deep frying pan until the carrot is soft. Grind the whole in a meat-grinder. Season with salt and finely grated nutmeg. Whisk the mass with an electric mixer adding 100 g butter. You may take a pinch of coriander seeds instead of nutmeg. This recipe also does for boiled liver paste, in this case the liver is boiled as a whole piece.

  Liver Paste with Vegetable Marrows

Ingredients

500 g beef liver
300 g vegetable marrows
200 g carrot
200 g onions
100 g parsley
greens
200 g butter
salt to taste


Method
Cut the liver into pieces and fry it them in butter. Grate the carrot coarsely and finely chop the onions. Rinse the vegetable marrows, slice them into round pieces and fry in butter. Saute the carrots and onions in butter. Grind all the vegetables and the liver in a meat-grinder. Sprinkle with salt and finely chopped parsley greens, mix well, adding 100 g butter.

  Paste From Boiled Meat with Roots and Greens.

Ingredients

500 g boiled meat
300 g parsnip (roots)
200 g carrots
200 g onions
30 g marjoram
fresh greens or 5 g dry marjoram greens
100 g vegetable oil or butter
salt to taste


Method
Rinse the parsnip and carrots, peel and finely chop them. Peel the onions and chop them finely as well. Saute all the chopped vegetables in vegetable oil, sprinkle with salt and grind them in a meat grinder together with the boiled beef. Rinse the marjoram, chop it finely, add to the mixture and whisk it all with an electric mixer.
