  Svekla

Ingredients

2c Russian tomato sauce
1ea Onion onion lg
1lb Carrots, peeled
1lb Beets, fresh & peeled
6tb Olive oil
2ts Sugar
1tb Red wine vinegar


Method
Grate the bbets, carrpts and onions together. Heat the olive oil in a large skillet. Add the sgredded vegetables and saute' over medium heat for 10 minutes. Stir in the tomato sauce, vinegar, & sugar. Continue to cook over medium heat5 srirring until the moisture evaporates, 20 minutes approx. be sure to continue to stir so it won't stick and burn. Remove from heat, allow to cool to room temp then refrigerate for 3-6 hours.

  Tomato and Cucumber Salad

Ingredients

6 firm, ripe medium tomatoes
3 firm pickling cucumbers, or 1 hothouse cucumber
1/3 2/3 Cup cold sour cream
Salt to taste

Ingredients

2 medium all-purpose potatoes, cooked in their ski
1 large beet, cooked in its skin
2 pickles, preferably home- made
1 tart apple
2 medium carrots, scraped and cooked
1 medium onion, finely chopped

  WHITE RADISH SALAD

Ingredients

3 medium white radishes (about 1 pound)
1 medium onion, finely chopped
2 tablespoons vegetable oil
salt to taste


Description
Like many other vegetable salads, this one is also served as a side dish with meat entrees. It also goes well with cold cuts and is good eaten alone, with coarse dark bread.

Wash and peel the radishes, then grate coarsely. In a heavy skillet, combine the radishes with the remaining ingredients and, over low heat, stir continuously for about 5 minutes. This will "melt out" the bitterness, so characteristic of white radish
